Joy as a Theory

Happiness is a practice like lemon squeezing.

Squeeze a little lemon on the fish, and it tastes better.

Happiness is good-eating fish.

It can be smoked.

It can be filleted and broiled.

Oysters raw with a tiny bit of horseradish.

Batter-fried whole bass with ginger sauce.

Any kind of garnish that works makes for happiness.

The dust of a dried red peperoncino after you break it up –

Don’t wipe your eyes with that dust,

But it’s good with fish.

Joy is the theory of happiness.

It imposes a practice of parsley and black raspberries.

A good garnish improves anything, provided it is good already.

A garnish cannot make an artichoke into an endive.

Artichokes have a lonely approach.

Only they can open their souls to happiness.

“The way to happiness,” the stranger asks, “which is it?”

O stranger pass through this your sorrow.

That is the way to happiness.
